Coconut Prawns with Dipping Sauce

This recipe was sent in from William, North Island, New Zealand. This could be an Alaskan recipe as well.... No matter, it is so yummy!

  • 24 medium to large prawns
  • 2 eggs, lightly beaten
  • 1 cup coconut flakes
  • 24 wonton wrappers
  • 1 ripe mango or 1/2 can mango slices in juice
  • 1 crushed clove garlic
  • 1 tablespoon chili sauce
  • 1 tsp. sugar
  • Fresh corriander or 1/2 tsp. of dry
  • oil for deep frying

Leave the tails on the prawns but remove the vien. Dip the prawns in the beaten eggs and then into the coconut. Wrap individual prawns in a wonton wrapper with the tail exposed.

Mash & mix the mango with garlic, chili sauce, sugar and a wee bit of coriander.

Deep fry until wontons are golden colored. Drain on paper towels or brown paper bag and serve with the mango sauce.
